Aunt Marilee's Frozen Fruit Cups

These feel like summer in bite to me. (And consequently I love them year round to remind me of fresh, summery foods!) They are quick to go together and are great for breakfast, as a dessert, or a nice healthy snack. In fact, I am snacking on one as I write this post!

Here's what you need to gather:

1 c. sour cream (I had plain greek yogurt on hand and used that)

1 c. vanilla yogurt

2 T. lemon juice

1/2 c. sugar (I usually do a little less...more like 1/3 c. sugar)

1/8 t salt

1 (15 oz) can crushed pineapple, drained well

1-2 bananas, chopped finely. (I've used 3 before when I had some that needed to get used)

4 drops red food coloring

1/4 c. chopped pecans

1 can pitted bing cherries, drained well

What to do:

Mix all ingredients except cherries. Fold in cherries. Freeze in paper muffin cups.

These can be made well in advance. Once they have frozen in the paper cups, I pull them out of the freezer, take off the liners, and pop into a gallon bag and stick them back into the freezer.

Hope you enjoy this fruity treat as much as we do!
