This recipe for lamb meatballs was quick to prepare, used simple ingredients, and was amazingly delicious! This recipe came from America's test kitchen, and I will walk you through the simple process! This is a slight modification to use 1 pound lamb, instead of the 10 oz from the ATK recipe that you can read here.
1st, make a sauce out of 2/3 cup plain yogurt, 2.5 T minced fresh dill, 1 minced clove of garlic, 1/4 t salt, and 1/8 t pepper. Reserve 2-3 T of this mixture into a medium sized bowl. Set aside the remaining sauce to use for topping.
Take your 1 pound package of ground lamb and break it up over the 3 T of yogurt mixture. Add in 3/4 t cumin, a heaping 1/4 t cinnamon, 1/4 t salt and 1/4 t pepper. Knead together until the mixture is well combined. Divide into 8 pieces and roll into meatballs.
Place you meatballs in the air fryer, spaced evenly. Cook at 400 degrees for about 10 minutes. Rotate and flip the meatballs then cook for another 3-4 minutes.
While the meatballs are cooking, combine 1/4 cup water, and 1/4 cup orange juice in a microwaveable bowl. Microwave 3-5 minutes until it is boiling. Stir in 1/2 cup couscous, and 2 T chopped raisins, and a little orange zest if you have any. Cover and let sit 7 minutes. Add in some shredded carrots and a tablespoon of dill and fluff with a fork. (Honestly, I think I would double the couscous in the future.)
Place the couscous into bowls and top with the meatballs. Drizzle with the yogurt sauce. Eat it up, and then thank me for sharing this great spring recipe with you!
